Savoury artichokes
ingredients
- 8 artichokes
- 1 lemon
- 1 egg
- 1/2 grapefruit
- 50g grated cheese
- 1 dessert spoon capers
- 2 anchovies
- 1 dessert spoon flour
- salt and pepper
preparation
• Clean 8 artichokes, removing the tougher leaves, and place them in cold water with the juice of 1 lemon, then drain them and cook for 15 minutes in salted water after stirring in one dessert spoonful of flour.
Beat 1 egg in a bowl with the juice of 1/2 grapefruit, add salt, pepper, 50g grated cheese, 1 dessert spoon capers, 2 desalted chopped anchovies, and mix together well.
Drain the artichokes, fill them with the mixture, cook for 20 minutes in the oven at 200 °C, and serve hot with a dash of olive oil.
